Pasta Sauce

Fall is here and that means tomatoes are rip and of plenty...that means its Pasta Time... My sisters and I all headed over to my Mom's house to make homemade Pasta sauce. It is a huge project that literally takes all day. My Mom usually does this all by herself and this year she decided to start getting all of us girls involved...Its a huge task but we had a good time being all together and started a new tradition!

We started at 11 in the morning and finally finished around 6:30.  There are so many steps that go into making Sauce...My Dad literally dropped off three very Large Bushells and then disappeared so we could work or magic.

  The steps ..real quick are

1), Inspect each tomato...cut off all bruises
2) Wash each tomato - removing all dirt
3. Boil/Steam the tomatoes so they get nice and soft
4) Once soft, put them into the machine to be grinded - the machine actually disposes all of the skin, seeds and core that should not be included in the sauce
 5) Steam Clean all of the glass jars
6) Cut Fresh Basil from my Mom's backyard - place into the clean jars
7) Pour the sauce - from the machine into a pan and boil on the stove for about an hour -drop in spices
8) Hand spoon pasta sauce into jars and seal TIGHT!!! So the rubber seal on the jar melts ensuring an air tight jar.

Like I said it is a very long process..but we had a great system...everyone was assigned a station and a job. My job was right next to the stove placing the soft tomatoes into the grinding machine.. The problem with this job was that I was working with steaming hot tomatoes and tomato sauce.  I think I burnt my hands and arms about a million times...but its all worth it.

The newest member of the family..Bobby.  I tried to get Rose to place him on top of all the tomatoes..but she was not having any part of that.
